Cottage cheese Paneer
Boil one litre full fat milk
Put few drops of vinegar and as soon milk curdles turn off flame.
Strain water and wash the Paneer.
Drain all water and knead it to dough gently with palms
Then give desired shape and store in deep fridge for few hours for it to set well

When required defrost it to room temperature and make cubes

Saamagri /Ingredients

Pure butter half cup
Sabut jeera
Tej patta
Everest tandoori masala or Jain tandoori masala
Dhaniya powder /coriander seeds powder
Paprika red powder
Tomato Paste Or tomato sauce
Fresh thick curd 2 tablespoons
Kasoori methi 2 tablespoons
Salt, gur as desired

In a wok take butter
Splutter jeera and add paneer pieces
Saute with a tablespoon of tandoori masala
Add Tej patta or bay leaf
Add 1 tablespoon Kasoori methi
Add tomato puree or tomato sauce
Add salt as desired
Add Gur if puree is sour
Cook few minutes add two tablespoon tandoori masala
Dhaniya powder and paprika powder
Stir gently and add thick curd and cook until all blends to thick gravy

Garnish with remaining Kasoori methi
Serve it hot, with roti of choice or rice of choice
